Shindangyuk | Water-Aged Pork & Whole Pork Kimchi Stew

After wrapping up a long day, I always found myself craving something spicy yet rich. Wanting to fill up and switch gears, I wandered through the up-and-coming alleyways near Sindang Station and stopped by a highly rated pork restaurant.

The place was 신당육 (Shindangyuk), which had built up quite a reputation for its water-aged pork. The assorted pork set was impressively juicy and tender, but what completely won me over was the deep, hearty broth of the kimchi stew we ordered on the side. I ended up finishing a whole bowl of rice in no time.

🥩 Stepping into Shindangyuk With a Crimson Aging Room

As soon as I walked in, the first thing that caught my eye was the aging room glowing under soft red lighting.

I learned that the meat here went through both water aging, which kept the water temperature consistent to help tenderize the pork, and wine aging.

Each table had a tablet kiosk, so it was easy to sit down and browse the menu comfortably.

We ordered the Shin Set, which included pork belly, five-layer pork belly, pork neck, and pork jowl, then added a kimchi stew that had received plenty of praise.

The table came neatly set with white kimchi, fresh kimchi salad, lightly seasoned bracken fern, and crisp wrap vegetables.

There was also a very clean self-serve station where guests could help themselves to extra vegetables and sauces.

At last, the generously thick cuts from the Shin Set arrived at the table.

Once the grill heated up, we put on the meat along with garlic scapes, shishito peppers, enoki mushrooms, and king oyster mushrooms. The sizzling sound and aroma drifting up from the grill instantly got my appetite going.

I picked up a beautifully grilled piece of pork belly and paired it with crunchy, sweet-and-spicy seasoned green onions. The moment I bit into it, savory juices burst across my mouth. The pork was so tender and pleasantly chewy that even a light dip in salt tasted fantastic. Wrapping it up with garlic, ssamjang, and fresh greens made every bite even more enjoyable.

🥘 Diving into a Hearty Whole Pork Kimchi Stew

Shindangyuk’s other main attraction: whole pork kimchi stew.

The real hidden star of the meal turned out to be something else entirely. It was the bubbling whole pork kimchi stew that arrived steaming hot.

I started with a spoonful of broth and immediately noticed its spicy, refreshing, deeply savory flavor, which tasted like it had been simmered for a long time.

What surprised me most was what appeared when I scooped up the stew. Instead of thin slices of pork typically used in kimchi stew, it was packed with thick, substantial chunks of pork.

The meat had cooked down until it pulled apart effortlessly along the grain. The spicy broth had soaked deep into every piece, making each bite incredibly satisfying. I topped hot white rice with tender tofu and tangy kimchi, mixed in some broth, and kept eating far longer than I expected. It was one of those meals that made it feel like there was a separate stomach for rice. It also seemed like the perfect dish to enjoy alongside a drink.
