Seonbi Kalguksu | Rich Perilla Kalguksu with Two Noodle Textures
Today, I brought a review of 선비칼국수 선릉점 (Seonbi Kalguksu’s Seolleung branch), a great spot for rich perilla seed kalguksu that helped soothe a tired stomach after work. At just over 10,000 KRW, I got to enjoy a deep perilla broth and a special bowl featuring two different noodle textures. The complimentary yeolmu barley rice before the meal made it feel even more filling.

I stopped by right after work during the dinner hours. The restaurant was clean, and there were several solo diners, so I settled in comfortably by myself.

As expected from a kalguksu restaurant, there were several noodle options available. Since I came specifically for the perilla version, I ordered the perilla kalguksu right away.

I noticed a sign mentioning that they served noodles in two different widths in the same bowl, and I couldn’t help but wonder how it would turn out.

After placing my order, I spotted a self-serve station nearby.
The self-serve bar offered kimchi, pickled radish, yeolmu greens, and a rice container filled with barley rice. Guests could help themselves as much as they liked. I scooped up a reasonable portion of barley rice and yeolmu kimchi.

Following the instructions, I topped the barley rice with crunchy yeolmu greens, added a spoonful of bibimbap sauce, and drizzled on a little sesame oil before mixing it all together.
The sweet and spicy seasoning paired nicely with the popping texture of the barley grains, making it a great way to work up an appetite before the main kalguksu arrived.

My perilla kalguksu finally arrived.
I don’t know if a video would’ve captured it properly, but the broth was thick and rich. From the very first spoonful, the nutty flavor filled my mouth.

The most interesting part was definitely the noodles.
The restaurant makes its own noodles daily, ensuring they’re properly hydrated. What made them unique was that they pulled the noodles in two different widths at the same time.
One type was slightly thinner than regular noodles, making it smooth and easy to slurp down. The other was wide and flat, almost like knife-cut noodles, with a chewy texture that reminded me of sujebi dough pieces. Switching back and forth between the two textures in a single bowl made the meal surprisingly fun.

I finished it quickly 😄. If I had one small complaint, it would’ve been that I wished there had been a bit more noodle quantity.
