You might’ve heard the meme that men’s ultimate comfort foods are tonkatsu (fried meat), gukbap (boiled meat), and spicy pork stir-fry (stir-fried meat). Is it really true?

Funny enough, whenever I’d eaten carbs for both breakfast and lunch, I always ended up craving tonkatsu for dinner… meat wins every time.

I happened to get a recommendation for a tonkatsu spot near Seolleung, so I stopped by after work. The place was 카츠랩 숯불돈까스 (Katsu Lab Charcoal-Grilled Tonkatsu).

Once I turned into the alley, the large sign immediately stood out, so it was easy to find.

🥩 Diving into the 300-Hour Aging Process at Katsu Lab

After sitting down and looking over the menu, the phrase “The Aesthetics of Time” caught my eye.

The pork was aged through a cross-aging process for 300 hours, fried for 300 seconds, and then rested over charcoal for about another 300 seconds.

That definitely got my expectations up.

Ordering was easy through the tablet at the table.

The limited-quantity premium loin was already sold out, so I went with their best-selling tenderloin katsu instead.

When the food came out, the thick cut and subtle pinkish color of the meat immediately grabbed my attention.

The side dishes included pickles, finely sliced aged kimchi, and cabbage. The cabbage dressing had a yuzu aroma that paired really well with the pork.

The meat looked incredibly tender, didn’t it?

Following the recommended way to enjoy it, I took the first bite with just a light touch of salt.

As the juices burst out from inside the crispy coating, the pork chewed up incredibly soft and flavorful.

Next, I topped it with a little house-made wasabi. Its sharp kick balanced out the richness nicely, and I really enjoyed that combination too.

Another standout feature here was the unlimited self-serve bar.

It stocked essentials like rice, soup, tonkatsu sauce, and pickled radish, but it also thoughtfully provided conveniences such as hair ties and phone chargers. It definitely delivered that extra sense of abundance.

It was more than enough to satisfy a hungry stomach after work. I cleaned my plate completely. 😄

I’d visited quite a few tonkatsu restaurants over the years, and this place easily ranked among my top picks. There wasn’t even a wait, so if you enjoy tonkatsu, it’s worth checking out.
