Ever have one of those days when a cold can of beer sounded perfect after work? When making an elaborate snack felt like too much effort and ordering delivery seemed unnecessary, these Bacon Rice Paper Rolls came in handy. They turned out crispy on the outside, savory on the inside, and incredibly easy to make!

The ingredient list was almost embarrassingly short. The whole recipe took about 15 minutes to make!

Rice paper: Round sheets worked too, but I used square rice paper because it was easier to roll.

Step 1. Cutting the ingredients

I first lined up three strips of bacon on a cutting board and chopped them into bite-sized pieces. Since my bacon was thick-cut, I divided each strip into about five pieces, but you could cut them larger if you preferred.

Step 2. Rolling them up with rice paper

I briefly soaked the rice paper in lukewarm water until it softened, then spread it out on the cutting board. After placing the bacon pieces on top, I rolled everything up tightly, almost like making mini kimbap rolls.

The overlapping sections of rice paper became incredibly crispy during cooking, so wrapping everything snugly without gaps was the key. Seeing the pink bacon show through the translucent wrapper already made them look delicious.

Step 3. Air frying

I lined the basket with air fryer parchment paper and arranged the rolls with enough space between them so they wouldn’t stick together.

I cooked them at 180 degrees for about 15 minutes. Depending on your air fryer and how crispy you wanted them, you could adjust the time as needed. While they cooked, the bacon fat rendered out and filled the house with a rich, savory aroma. Even before tasting them, I already knew they’d be good.
